Steve Eller relocated from Texas to open the first Cosmic Cowboy in Coeur d'Alene in 2017. The fast casual restaurant offers traditional, Southwestern grilled fare like tri-tip steak paired with De Leon tortillas. Yet Cosmic Cowboy offers a much broader variety of organic, gluten-free, low carb, vegan and vegetarian choices than any typical roadhouse. Beer and wine are also available in the Idaho location.
